I am a HUGE breakfast and brunch person (read: pancakes and copious amounts of mimosas). On a normal day, I eat veggie egg white omelettes with Ezekiel bread or oatmeal with berries but on Sundays especially I get a hankering for pancakes. I hope you enjoy my recipe for Oatmeal Banana Pancakes–high in protein AND taste!
Get Fit Diva’s Oatmeal Banana Pancakes
1 medium-sized ripened banana
5 servings of Egg Whites
1/2 cup of steel-cut oats
1/2 teaspoon of cinnamon spice
In a medium-sized bowl, pour in egg whites. With a blender or handheld mixer (use the whisk attachments) froth the egg whites for 30 seconds.
Stir in the oats and 1/2 tsp of cinnamon. Let the mixture sit three to five minutes.
Mash in the banana making sure there are no lumps.
Spray a medium sized frying pan with nonstick spray and set heat to medium.
Pour oatmeal banana pancake batter into pan.
Cook on medium heat until bubbly and a bit browned on the bottom.
Flip. Cook the other side. Remove pancake to plate.
Serve hot with your choice of topping (berries, sugar free syrup, or natural peanut butter!). This recipe yields two large pancakes.
To my calculation, one pancake is 7 Points Plus (Weight Watchers). If you don’t like bananas, omit and you can sweeten the pancake with one or two teaspoon of raw agave or stevia.
