My days are crazy busy but I take time out of each day to be active with my dog Yoda. I like to tell people the story of our rescue dog but in reality he rescued me! Yoda has been great at helping me train for races and I’ve nicknamed myself “The GET FIT Dog Jogger” since it’s not unusual for me to suit up and take Yoda for my shorter runs around the neighborhood or to a nearby park. Yoda also reminds me to take breaks during the day. We take short walks so he can take of his business but I also get in my steps and get some much needed fresh air!
Yoda and I even signed up for a virtual 5K on National Run With Your Dog Day on May 5th – a day where you can run with your dog, share pictures. Is it a made-up holiday? Yes but I’m excited to run (walk or crawl) a 5K (3.1 miles) with Yoda. There are no rules, no pace requirements no pressure. Virtual runs are the best! There are no parking hassles and no long lines at the porta potty. I think Yoda is going to love me for this!
To fuel our runs, I prepare Rachael Ray Nutrish meals for Yoda and healthy meals for me and my family. I hate to admit it but I’m a little jealous that he gets to partake in one of my favorite versions, albeit for dogs, of a savory classic–chicken pot pie so I decided to make a delicious individual sized chicken potpies for my family to enjoy! I “lightened” the recipe found on the Nutrish site for HUMAN consumption using reduced fat low sodium chicken broth, portabella mushrooms, whole wheat flour and only used 1 tablespoon of butter. These little changes add up and I don’t feel as bad indulging in savory puff pastry! I also added corn and green beans–more vegetables! This is one of many “Yum-o!” recipes – it’s good and good for you.
